Swiss Chard Pasta
Description
Colorful rainbow chard with pasta :-)

spaghetti
360 g
kosher salt
for pasta water (1-1.5%)
extra virgin olive oil
1/4 cup
shallot (thinly sliced)
1 large
Swiss chard (chopped)
1 bunch
garlic (finely minced)
3 cloves
white wine
1/2 cup
kosher salt
1/2 teaspoon more to taste
freshly ground black pepper
1/4 teaspoon
pitted karamata olive (sliced)
1/3 cup
Pecorino Romano (grated)
as desired

Gather all the ingredients.

Oil in a large pan over medium heat, add shallots.

Cook until tender. Add the chard stems and cook.

Add the rest of the chard and cook until wilted.

Add garlic and cook until fragrant. Stir in wine.

Bring to a simmer and season with salt and pepper.

Lower the heat to prepare for the pasta.

Bring to a boil in a large pot of water. Add pasta and cook.

Reduce pasta cooking time by 1min so we FINISH it in the PAN

Transfer the pasta into a pan, and toss to combine.

Turn off the heat and stir in olives and toss once more.

Swiss chard stem has a lot of cellulose. Cook it a little longer than the leaves to help adjust the texture.
