For the rub: Combine all the ingredients in a small bowl.

Rub thoroughly over all sides of the meat.

Wrap the meat in a plastic wrap and put in an airtight bag.

Refrigerate over night.

Leave the meat in room temperature for 1 or 2 hours.

Position a rack in the second to lowest section of the oven.

Preheat the oven to 325 F.

Prepare in a roasting pot such as the Han Solo Carbonite →

Roaster or a Darth Vader Round Dutch Oven.

Oil in a roaster over medium high heat. Place meat.

Sear on all sides until nicely browned. Remove the meat.

Pour the red wine into a roaster then bring to a boil.

Scrape any browned bits from the bottom of the roaster.

Cook off the liquid for about 10 minutes.

Place the meat back into a roaster, add broth, bay leaf →

Bring to a simmer then cover and bake for 1 hour.

Take the roaster out from the oven, turn over the meat.

Cover and bake 1 hour more.

Take a roaster out again, add all the rest of the veggies.

Take the roaster out from the oven. Discard the bay leaves.

Remove the roast and vegetables.

Bring broth to a boil briefly to concentrate it.
