Description

Our favorite special main course for any time :-)

材料 (6-8 servings)

boneless beef chuck roast
3 lb
 
For the beef rub:
smoked paprika powder
2 teaspoons
ground mustard seeds
1 teaspoon
light brown sugar
1 teaspoon
kosher salt
2 teaspoons
freshly ground black pepper
1 teaspoon
 
For the pot roast:
avocado oil
2 tablespoons
red wine
2 cups
beef broth
1 cup
bay leaf
2
garlic (smashed)
4 cloves
yellow or Vidalia onion (cut into quarters)
2 large
fresh rosemary
2 sprigs
fresh thyme
2 sprigs
baby yellow or red potato
1 lb
shallot (peeled)
5 smalls
carrot (cut into 2" pieces)
4
celery (cut into 2" pieces)
3 stalks
baby bella mushroom (rinsed and patted dry)
8 oz
 
kosher salt
to taste
freshly ground black pepper
to taste

    Here is the main cast!

    For the rub: Combine all the ingredients in a small bowl.

    Rub thoroughly over all sides of the meat.

    Wrap the meat in a plastic wrap and put in an airtight bag.

    Refrigerate over night.

    Leave the meat in room temperature for 1 or 2 hours.

    Position a rack in the second to lowest section of the oven.

    Preheat the oven to 325 F.

    Prepare in a roasting pot such as the Han Solo Carbonite →

    Roaster or a Darth Vader Round Dutch Oven.

    Oil in a roaster over medium high heat. Place meat.

    Sear on all sides until nicely browned. Remove the meat.

    Pour the red wine into a roaster then bring to a boil.

    Scrape any browned bits from the bottom of the roaster.

    Cook off the liquid for about 10 minutes.

    Place the meat back into a roaster, add broth, bay leaf →

    garlic, onion, rosemary and thyme.

    Bring to a simmer then cover and bake for 1 hour.

    Take the roaster out from the oven, turn over the meat.

    Cover and bake 1 hour more.

    Take a roaster out again, add all the rest of the veggies.

    Cover and bake for another hour or →

    until the roast and the vegetables are tender.

    If the roast isn't done, continue to bake for 20 minutes

    Take the roaster out from the oven. Discard the bay leaves.

    Remove the roast and vegetables.

    Cover loosely with aluminum foil and set aside.

    Bring broth to a boil briefly to concentrate it.

    Taste and season with salt and pepper.

    Slice the meat into thick slices, serve with sauce/veggies.

    NOTE: ↑This is the congealed fat on top of the sauce.

コツ・ポイント

If you want to remove extra fat from the sauce, cool the sauce, then discard the congealed fat on top of the sauce!
