Komatsuna Pickles
Description
Only two ingredients can make great home made pickles!

komatsuna
1 bunch
kosher salt
3% of komatsuna weight

Rinse the komatsuna well.
Drain well.

Cut off the roots and chop it in half.

Place half of the komatsuna in a bag.

My komatsuna weight=280 g, so I added 8g of salt.

Sprinkle half of the salt over the komatsuna.

Place the rest of the komatsuna into a bag.

Add the rest of the salt over the komatsuna.

Seal it up and place it in a freezer for 2-3 days.

Move to a fridge then allow it to completely thaw.

Take the komatsuna out from the freezer bag.

Use your hands to squeeze extra moisture from the komatsuna

Chop the komatsuna and serve.

NOTE: For the spicy version, add chili into the bag.
