Description

One of the simplest side dishes in Japan!

材料

okura
8-10
kosher salt
 
For the dressing:
noodle soup base ID : 7201984
2 tablespoons
cane sugar
2 teaspoons
roasted ground sesame seeds
4 tablespoons

作り方

    Cut off the stem end of the okura.

    Peel off the edge of the calyx with a knife.

    NOTE: This prevents the water from getting in the okura.

    Place the okura on the cutting board.

    Sprinkle kosher salt over the okuras.

    Rub okura gently back and forth against the cutting board.

    OR place the okura into a colander and sprinkle salt over it

    Gently rub them against each other to remove the fuzzy skin.

    NOTE: This helps to remove the fuzzy skin from the surface →

    and brings out a bright green after cooking it.

    Bring water to a boil in a medium pot or pan.

    Put in the okras into a pot (without removing the salt).

    Blanch for 1.5-2 mins (flip okura at times to evenly cook).

    Transfer the okura to a colander.

    Run cool water over the okura and drain well.

    Tap with a paper towel to remove excess moisture.

    Chop into bite sized pieces.

    Combine all the sauce ingredients in a mixing bowl.

    Add okura into a bowl and toss well.

    Serve.

The extra steps in blanching the okura prevent a watery result.

My husband wasn't a big fan of okura, but he likes the sesame dressing's recipe. This is our staple summer side dish :-)
