Glass Noodle Salad
Description
Citrus dressing with glass noodles makes a warm salad.
材料
(3-4 servings)
bean thread noodles
1 bundle (2oz)
shrimp (peeled and deveined)
4-5
iceberg lettuce (julienne)
1-2 leaves
celery (angled)
1 rib
red bell pepper (julienne)
1/2 medium
fresh cilantro (chopped)
1/2 cup
shallot (thinly sliced)

NOTE: I don't add chili when we eat with my kids, but for grown ups, you should add this!

for the dressing:
fish sauce
2 tablespoons
lime juice
3 tablespoons
coconut palm sugar
2 tablespoons
garlic (minced)
1 clove
crushed red peppers
1/4 teaspoon

Gather all the ingredients.

Combine all the sauce ingredients. Set aside.

Place noodles in a heat resistant glass bowl.

Pour boiling hot water over the noodles.

Let it soak until soft and clear. (5-6 minutes).

Transfer noodles to a colander and drain well.

Place cooked noodles into a large mixing bowl.

Cut the noodles with scissors to make it easy to eat.

In a small pot, bring water to a boil, and add shrimp.

Blanching for 1 minute or until pink. Don't over cook.

Drain well and add into the mixing bowl.

Add the rest of the ingredients into the mixing bowl.

Pour dressing over the noodle mix, and toss well.

Serve.

If you want to serve it cold, keep it in a fridge for at least an hour before serving.
