Shrimp Fried Rice
Description
Thai street food style fried rice!
材料
(3-4 servings)
cooked rice
500 g
shrimp (peeled and deveined)
1/2 lb
carrot (medium diced)
1/2 medium
scallions (chopped)
2-3
snow peas
1/2 cup
2 large
garlic (minced)
3 cloves
canola oil
1 tablespoon + 2 tablespoons

for the sauce:
oyster sauce
2 tablespoons
Chinese dark soy sauce
2 teaspoons
Chinese light soy sacue
2 teaspoons
lime juice
1 tablespoon
light brown sugar
2 teaspoons
ground white pepper
1/4 teaspoon

Gather all the ingredients.

If the leftover rice is cold, nuke it well.

Combine all the sauce ingredients. Set aside.

Oil in a wok over medium heat, add shrimp.

Cook until almost heated through. Remove from wok.

Add oil and continue to heat at medium, add garlic.

Cook until fragrant, and add carrots, scallions and peas.

Pour in eggs to make the scramble.

Add rice, then break down evenly with a spatula or spoon.

Add shrimp and sauce mix then toss well.
