Description

A healthy and meatless bean curry!

材料 (5-6 servings)

yellow or Vidalia onion (chopped)
1 medium
fresh ginger (minced)
1 tablespoon
garlic (minced)
3 cloves
 
avocado oil
2 tablespoons
curry powder
2 tablespoons
turmeric
1 teaspoon
ground cumin
1/2 teaspoon
 
crushed canned tomato
400 ml
 
kosher salt
one pinch +1 1/2 teaspoons
freshly ground black pepper
1/2 teaspoon
cane sugar
1 teaspoon
dried green lentils
1 cup
light or regular coconut milk
1 can (400ml)
2 cups
 
garam masala
1 teaspoon
heavy cream
3 tablespoons
 
fresh cilantro (chopped)
1/2 cup

    Gather all the ingredients.

    Oil in a large Dutch oven over medium heat.

    Add onion, salt and cook until onion gets sweet (10 mins).

    Add ginger, garlic and cook until fragrant.

    Add curry powder/turmeric/cumin and cook for 1 minute.

    Add crushed tomato. Stir occasionally and cook for 5 mins.

    Add salt/pepper/sugar/lentil/coconut milk/water and stir.

    Bring to simmer and cover and cook while gently simmering.

    Simmer and cook for 30 mins or until lentils get tender.

    Uncover and simmer to reduce the sauce for 10 minutes.

    Stir in garam masala/heavy cream and simmer for 2 minutes.

    Stir in cilantro and taste, add salt as needed.

    Serve with your choice of rice!

    NOTE: For the kick, you can use HOT curry powder instead!

Add sugar to cut off the canned tomato's acidity.
