Gather all the ingredients.

Oil in a Dutch oven over medium heat.

Add onion, celery, carrot, garlic and salt.

Cook while stirring occasionally for about 10 minutes.

Stir in pepper, cumin and coriander and cook until fragrant.

Add beans, water, bouillon, oregano, salt and pepper.

Increase the heat to medium high and bring to a simmer.

Scoop the scum from the surface, and discard.

Reduce the heat, cover, and gently simmer for 20 minutes.

Uncover and use an immersion blender to blend the soup.

OR cool off the soup and transfer it to the blender.

Purée until smooth, then add back to the pot and stir.
