Creamy Shrimp Soup
Description
A hearty and creamy tomato soup with shrimp!

(5 big serving or 6-8 small serving)
shrimp (peeled and deveined)
1/2 lb
yellow or Vidalia onion (chopped)
1 large
celery (chopped)
2 stalks
garlic (minced)
1 clove
mushroom pieces & stems (drained)
1 can (6.5oz)
extra virgin olive oil
1 tablespoon
white wine
1/3 cup
1 cup
crushed tomato
1 can (28oz)
better than bouillon chicken or vegetable base
2 teaspoons
heavy cream
1 cup
ground cumin
1 teaspoon
kosher salt
one pinch + 1/4 teaspoon or more to taste
freshly ground black pepper
1/8 teaspoon
fresh Italian parsley
for garnish

Gather all the ingredients.

Oil in a large Dutch oven over medium heat.

Add onion/celery/salt and cook 10 mins. Stir occasionally.

Add garlic and cook until fragrant.

Add shrimp and mushrooms. Cook until almost heated through.

Add wine and cook for 3 minutes.

Add water and tomato and bouillon. Simmer and cover.

Cook while gently simmering for 10 minutes.

Uncover and stir in heavy cream, cumin, salt, and pepper.

Bring it to a simmer once more and taste, adjust with salt.
