Add eggs into a small bowl.

Gently mix with chopsticks until thoroughly blended.

In a small container, add water and starch, then mix well.

Combine all the rest of ingredients and mix well.

Pour the seasoning mix into an egg bowl, then mix well.

Oil in an 8" non-stick pan over medium heat.

Let paper towels absorb the excess oil from the pan.

Place the paper towel in a small container, and set aside.

Pour the egg mix as a thin layer covering the bottom.

The bottom of the egg is set but still slightly wet on top →

so begin rolling the mixture. Use chopsticks or a spatula →

to lift and roll the egg sheet over itself. Repeat twice.

Apply more oil to the pan with a paper towel.

Pour the egg mixture to cover the bottom of the pan. →

Make sure to spread the eggs underneath the omelette.

Once a new layer of egg is set and wet on the top, repeat →

Place the omelette on a sushi mat covered by a plastic wrap.

Roll up the omelette in the mat to set its shape.
