Preheat the oven to 400 F.

Cook pasta according to the package directions. Set aside.

Gather all the ingredients.

Oil in a large skillet over medium heat.

Add garlic and cook until fragrant.

Add prosciutto and cook for 1 minute.

Add onions, mushroom, and cook until onions soften.

Add wine and stir and cook 2-3 minutes. Then lower the heat.

Stir in flour until well blended with no dry spots.

Gradually add milk while stirring to dissolve the flour.

Make sure there aren't any lumps of flour.

Add remaining milk, heavy cream, salt, pepper and nutmeg.

Bring it to a boil, cook and stir until sauce thickens.

Taste, season with salt and pepper as needed.

Add penne to combine with the sauce.

Transfer the pasta mixture to an oven-safe baking dish.

NOTE: Grease the baking dish with olive oil or butter.

Sprinkle cheese over the pasta, sprinkle panko on top.

Sprinkle parmigiano reggiano over the panko.

Place in the oven for 20 mins, or until golden brown on top.
