Mushroom Udon
Description
Our Japanese soup stock is not only useful for miso soup!
材料
dashi
4 cups
tamari soy sauce
2 tablespoons
Japanese light soy sauce
3 tablespoons
sake
2 tablespoons
mirin
2 tablespoons
kosher salt
1/4 teaspoon
oyster mushroom (shredded)
200 g
shiitake (slicked)

ginger (grated)
1 tablespoon
scallion (sliced)
for ganish

Gather all the ingredients.

Prepare dashi your own way. (from scratch, packet, powder).

Add tamari, light soy sauce, sake, mirin and salt.

Bring to a boil. Add mushrooms, bring it to a simmer. Cover

Cook until mushrooms get tender. Taste and adjust with salt.

Turn off the heat and stir in ginger. Cover and set aside.

Cook your udon according to your package instructions.

Drain, put into a bowl, pour the broth over the udon.

Add scallions over the udon and serve!
