Green Cauliflower
Description
The nicely ripe avocado adds a creamy texture to each bite!

cauliflower florets
1 medium head (600 g)
kosher salt
for cooking water
ripe avocado

shallot (thinly sliced)

for the dressing:
extra virgin olive oil
3 tablespoons
raw apple cider vinegar
1 tablespoon
lime juice
1 tablespoon
country style dijon mustard
1 teaspoon
cane sugar
1/2 teaspoon
fine sea salt
1/4 teaspoon
freshly ground black pepper
to taste

Whisk in all the dressing ingredients in a large mixing bowl

Rinse the cauliflower before blanching.

Chop into bite-sized pieces.

Bring a large pot of water to a boil.

Add salt and cauliflower and cook for 2-3 minutes.

Drain the cauliflower through a strainer well.

Transfer the cauliflower into a mixing bowl.

Add shallots/avocado. Toss gently to coat with dressing.

I purchase avocados that are green, and let them ripe in the kitchen. I decided to add a creamy texture for this salad!
