Description

The nicely ripe avocado adds a creamy texture to each bite!

材料 (4-5 servings)

cauliflower florets
1 medium head (600 g)
kosher salt
for cooking water
 
ripe avocado
1
shallot (thinly sliced)
1 small
 
for the dressing:
extra virgin olive oil
3 tablespoons
raw apple cider vinegar
1 tablespoon
lime juice
1 tablespoon
country style dijon mustard
1 teaspoon
cane sugar
1/2 teaspoon
fine sea salt
1/4 teaspoon
freshly ground black pepper
to taste

    Whisk in all the dressing ingredients in a large mixing bowl

    Rinse the cauliflower before blanching.

    Chop into bite-sized pieces.

    Bring a large pot of water to a boil.

    Add salt and cauliflower and cook for 2-3 minutes.

    NOTE: this water has about the same saltiness as pasta water

    Drain the cauliflower through a strainer well.

    Transfer the cauliflower into a mixing bowl.

    Add shallots/avocado. Toss gently to coat with dressing.

    Taste, adjust with salt or pepper as needed.

    Serve warm or chill in a fridge 1 hour before serving.
