Description

Leftover broth creates a tasty double with the mushroom!

材料 (4 servings)

oyster mushrooms (shredded)
200 g
 
For the soup:
leftover broth (recipe ID:7185672)
3 cup
1 cup
kosher salt
1/2 teaspoon
saishikomi or tamari soy sauce
2 tablespoons
 
For the garnish:
scallions (chopped)
as desired
tenkasu (fried wheat flour)
as desired

作り方

    Add broth/water/salt/soy sauce in a Dutch oven (2 US qt).

    Bring it to a boil, and add mushrooms.

    Skim the scum from the surface, and discard.

    Bring it to a simmer and cover and cook for 5 minutes.

    Taste, and adjust with salt as needed. Lower the heat.

    Cook your udon according to your package directions.

    Drain, put into a bowl, and pour the broth over the udon.

    Place mushrooms on top of the noodles.

    Add scallions and tenkasu over the udon. Serve!

コツ・ポイント

Use saishikomi or tamari soy sauce to add extra umami. Use oyster mushrooms to add more flavor to the broth.
