Description

The tough meat turns out tender when shredded with a fork!

材料

Boston Butt (take your meat out of the fridge and let it sit at room temperature for an hour)
3-4 lb
 
liquid smoke
1/2 tablespoon
 
kosher salt
1/2 tablespoon
freshly ground black pepper
2 teaspoons
ground cumin
1 teaspoon
dried thyme
1 teaspoon
paprika powder
1 teaspoon
garlic powder
1 teaspoon
 
extra virgin olive oil
2 tablespoons
 
barbecue sauce (optional)

    Gather the ingredients. (this pork butt was 3.55 lb).

    Position a rack in the second to lowest section of the oven.

    Preheat the oven to 450 F.

    Trim some fat from the pork.

    Combine the salt/pepper/cumin/thyme/paprika/garlic. Mix well

    Rub the liquid smoke over the entire piece of meat.

    Rub the dry mixture over the entire piece of meat.

    Oil in a Dutch oven (5 1/2 US Qt) over medium high heat.

    Place the meat.

    Sear on all sides until nicely browned.

    Cover the pork with aluminum foil.

    Place the Dutch oven in the oven.

    Reduce the heat to 300 F and roast for 3 hours.

    Or cook until the inner temperature reaches 170°F.

    Remove from the oven, and let it rest for 30 mins.

    Shred the meat and toss with barbecue sauce, and serve!

I use stovetops most of the time, but slowly cooking it in the oven is time saving, and the result is always tender :-)
