Gather the ingredients. (this pork butt was 3.55 lb).

Position a rack in the second to lowest section of the oven.

Preheat the oven to 450 F.

Trim some fat from the pork.

Combine the salt/pepper/cumin/thyme/paprika/garlic. Mix well

Rub the liquid smoke over the entire piece of meat.

Rub the dry mixture over the entire piece of meat.

Oil in a Dutch oven (5 1/2 US Qt) over medium high heat.

Place the meat.

Sear on all sides until nicely browned.

Cover the pork with aluminum foil.

Place the Dutch oven in the oven.

Reduce the heat to 300 F and roast for 3 hours.
