Description

A hearty, colorful, and creamy chowder!

材料

sweet or yellow onion (diced)
1 large
carrots (diced)
2 medium
celery (diced)
2 stalks
yellow or Yukon gold potatoes (diced)
2 medium
red bell pepper (diced)
1/2 large
turkey bacon (chopped)
2 lices
garlic (minced)
2 cloves
frozen corn
1 cup
frozen peas
1/3 cup
 
extra virgin olive oil
2 tablespoons
unsalted butter
1 tablespoon
 
all-purpose flour
4 tablespoons
4 cups
better than bouillon chicken base
1 tablespoon
kosher salt
1/2 teaspoon
freshly ground black pepper
1/4 teaspoon
cream style corn
1 can (14 oz)
dried oregano
1/2 teaspoon
 
heavy cream
1/2 cup
 
your choice of shredded cheese
to taste

    Gather all the ingredients.

    Oil & butter in a Dutch oven (3 1/2 US qt) over medium heat.

    Add onion/carrot/celery and cook for about 10 minutes

    Add potato/pepper/bacon/garlic and cook 2-3 minutes.

    Sprinkle the flour over the veggie mix. Stir until sludgy.

    Slowly pour in milk while stirring to dissolve the paste.

    Make sure there aren't any lumps of flour.

    Pour in the remaining milk. Stir in cream/frozen corn.

    Add bouillon, salt, black pepper, and oregano.

    Stir and bring to a boil, and reduce heat to a simmer.

    Stir and cook until thickened and veggies are tender.

    Stir in peas and heavy cream.

    Taste, adjust with salt and pepper as needed. Serve.

コツ・ポイント

Use turkey bacon to reduce the fat and add a savory flavor. To keep a bright green in the peas, add them at the end.
