Description

Avocado and baby spinach create an extra green color!

材料 (4 servings)

spaghetti
400g
kosher salt
for pasta water
 
for the pasta sauce:
ripe avocados
2 large
baby spinach
50 g
fresh basil
10 g
garlic
2 cloves
extra virgin olive oil
4 tablespoons
white wine vinegar
1 teaspoon
fine sea salt
2/3-1 teaspoon
freshly ground black pepper
1/2 teaspoon
freshly grated parmigiano reggiano
1/3 cup

    Gather all the ingredients.

    Cook your pasta according to the package directions.

    Drain well and set aside.

    Place all the pasta sauce ingredients into a food processor.

    Blend until it turns into a smooth sauce.

    Transfer into a small bowl. Taste, adjust with salt/pepper.

    Add sauce over the pasta.

    Toss well until pasta gets evenly coated with sauce. Serve.

コツ・ポイント

Use white wine vinegar as a substitute for lemon juice. Add baby spinach and basil for more nutrients and an aroma.

このレシピの生い立ち

I love citrus but if it's obvious in a dish it might be overwhelming. For this, I skipped the lemon juice for my son.
