Description

A local meal that's popular after meeting western cuisine!

材料 (3-4 servings)

boneless skinless chicken thighs
600 g
kosher salt
to taste
freshly ground black pepper
to taste
garlic powder
to taste
 
all-purpose flour
1/3 cup or more as needed
1 large
 
canola oil
fill up the pan until it's 1/2" deep
 
For the sauce:
cane sugar
4 tablespoons
tamari soy sauce
3 tablespoons
rice vinegar
2 tablespoons
 
tartar sauce:ID : 7261301
as desired

    Combine all the sauce ingredients, and mix well. Set aside.

    Chop the chicken into big bite-sized chunks.

    Season both sides of the meat with salt, pepper, and garlic.

    Prepare two trays, one for the flour, and one for the egg.

    Coat the meat with flour, then dust off any excess flour.

    Add the frying oil to a large skillet.

    Bring it to 350F over medium heat.

    Dip the meat into the egg, then allow the excess to drip.

    Place the chicken into the oil and repeat the rest.

    Cook until the bottom is golden brown.

    Turn the chicken over and cook until golden brown.

    Transfer the meat to the heat safe container.

    Discard excess oil from the pan, then put back on the stove.

    Put the meat back into the skillet. Pour the sauce on top.

    Bring it to a simmer and cook until the sauce is thickened.

    Toss well to evenly coat the meat with sauce.

    Serve with homemade tartar sauce!

コツ・ポイント

Use tamari soy sauce to add some umami. Add extra sugar to neutralize the vinegary taste for balancing out the flavor.
