Description

A rich and creamy sauce goes well with any type of pasta!

材料 (2-3 servings)

spaghetti
200 g
kosher salt
for pasta water (1-1.5%)
 
extra virgin olive oil
3 tablespoons
 
cream cheese (cut into cubes)
4 oz
garlic (minced)
2 cloves
freshly grated parmesan cheese
1/2 cup
pasta water
1/2 cup
freshly ground black pepper
1/2 teaspoon
kosher salt
to taste
 
fresh Italian parsley (minced)
2 tablespoon

    Bring water to a boil in a large pot. Add pasta and cook.

    Reduce pasta cooking time by 1min so we FINISH it in the PAN

    Meanwhile, oil in a large skillet over medium heat.

    Add garlic and cook until lightly golden.

    Add pasta water, and whisk until combined.

    Reduce the heat to medium low. Add cream cheese and parmesan

    Whisk until it melts and makes a creamy emulsion.

    Season with salt and pepper.

    Add pasta and parsley, then toss well to evenly combine.

    NOTE: If the sauce is too thick, add more pasta water.

コツ・ポイント

Use pasta water for the sauce, making sure to add 1% kosher salt for the pasta water.

My love is gone for a business trip to CA, but I still have leftover cream cheese. So I decided to make a HEAVY pasta :P
