Shrimp Penne Pasta
Description
A premade tomato sauce with shrimp for a weekend dinner!

(3-4 servings)
penne pasta
6 oz
kosher salt
for pasta water (1-1.5%)
shrimp (peeled and deveined)
1 lb
extra virgin olive oil
2 tablespoons
crushed red pepper
1/4 teaspoon
tomato sauce (recipe ID7152917)
1 1/2 cups
kosher salt
1/2 teaspoon
freshly ground black pepper
1/4 teaspoon
heavy cream
1/3 cup
baby spinach
2 oz
freshly grated Pecorino Romano
for garnish (optional)

Oil in a large skillet over medium heat.

Add tomato sauce and red pepper.

Cook until sauce reaches the desired texture.

Stir in cream. Season with salt/pepper, and lower the heat.

Add shrimp and cook right before adding pasta.

Meanwhile, bring water to a boil to cook the pasta.

Reduce the cooking time by 1 min so we FINSH it in the pan.

Add pasta/spinach and toss over medium high heat.

Add shrimp right before finishing the sauce to prevent overcooking it.

I wasn't a big fan of short pasta in the past, but I am now! Try to change the type of pasta depending on the sauce :-)
