Description

These quick and easy bars are a tasty treat for the summer!

材料 (8" square pan)

for the crust:
graham cracker crumbs
200 g
light brown sugar
4 tablespoons
ground cinnamon
1/4 teaspoon
unsalted butter (melted)
100 g
 
for the key lime filling:
cream cheese (softened)
2 oz
egg yolks (leave at room temperature)
from 3 large eggs
fine sea salt
1/8 teaspoon
sweetened condensed milk
1 can (14 oz)
key lime juice
1/2 cup
key lime zest
2 teaspoons
 
for the topping:
heavy cream (cold)
1/4 cup
powdered sugar
1 teaspoon
pure vanilla extract
1/8 teaspoon
 
key lime (thinly sliced into-moons)
for garnish (optional)

    Gather the ingredients.

    Preheat the oven to 350F.

    Prepare 8" baking pan. Line with parchment paper. Set aside.

    Making the crust:

    Use a food processor and pulse the crackers into crumbs.

    Transfer the crumbs into a medium mixing bowl.

    Stir together the sugar and cinnamon.

    Add melted butter and stir until combined.

    Pour the mixture into a baking pan.

    Press the mixture into the bottom of the baking pan.

    Bake for 10 minutes.

    Remove from the oven, and leave the oven on.

    Let it cool completely on a wire rack.

    Making the key lime filling:

    Place the cream cheese into a large mixing bowl.

    Beat the cream cheese until soft and smooth.

    Whisk in the egg yolk and salt until combined.

    Pour the condensed milk slowly and mix constantly.

    Continue to whisk the milk until combined.

    Add lime zest, lime juice, and whisk to combine.

    Pour the filling over the crust.

    Bake for 10-12 mins or until the filling has just set.

    Chill in a fridge for at least 2 hours.
