Ham/Komatsuna Salad
Description
Red wine vinegar dressing sweetened by maple syrup!
材料
komatsuna
2 bunches
kosher salt
one generous pinch
ham (cut into about 2" long strips)
2 slices (1/3 cup)

for the dressing:
extra virgin olive oil
2 tablespoon
red wine vinegar
2 teaspoon
dijon mustard
1 teaspoon
maple syrup
2 teaspoons
fine sea salt
1/4 teaspoon or more to taste
freshly ground black pepper
1/8 teaspoon

Chop cooked komatsuna into 2" long pieces.

Combine all the dressing ingredients in a large mixing bowl.

Add komatsuna and ham. Mix well until combined.

Komatsuna is a good source of calcium. I'm over 50, so I decided to eat it more often to prevent osteoporosis :-)
