A rich/nutty sesame dressing with Japanese mustard spinach

komatsuna
2 bunches
kosher salt
one generous pinch

ground toasted sesame seeds
3 tablespoon
mayonnaise
3 tablespoon
shirodashi
1 tablespoon
mirin
1 tablespoon
cane sugar
1/2 tablespoon
fine sea salt

Chop cooked komatsuna into 2" long pieces.

Combine all the dressing ingredients in a large mixing bowl.
