Description

A meatless Mapo Tofu recipe!

材料 (4 servings)

soft or medium firm tofu (cut into cubes)
1 pack (14 oz)
beyond beef
1/2 pack
garlic (minced)
1 clove
ginger (minced)
2 teaspoons
scallions (finely chopped)
2-3
 
canola oil
2 tablespoons
 
for the sauce mix:
fermented black bean sauce (豆豉醬)
1 tablespoon
sweet bean sauce (甜麺醤)
1/2 tablespoon
bean paste (豆板醤)
1 teaspoon
 
for the broth mix:
200 ml
sake
2 tablespoons
Chinese light soy sauce
1 tablespoon
Chinese dark soy sauce
1 tablespoon
chicken bouillon powder
1 teaspoon
cane sugar
1 teaspoon
 
kosher salt
to taste
ground white pepper
to taste
toasted sesame oil
2 teaspoons
 
potato starch
1 tablespoon
2 tablespoons

作り方

    Combine potato starch and water in a bowl. Set aside.

    Combine all the broth seasoning in a measuring cup.

    Oil in a wok over medium high heat. Add garlic/ginger.

    Cook until garlic gets fragrant.

    Add beyond beef, crumbling the beef up into small chunks.

    Add all the bean sauce mix and stir thoroughly.

    Add the broth mix and bring it to a simmer. Add tofu.

    Cook until heated through. Add starch mix. Bring to a boil.

    Cook until the sauce thickens. Taste, add salt as needed.

    Add white pepper, scallions, and oil, then stir once more.

Recently I noticed that beyond beef is cheaper. We aren't vegan, but I like to use meat alternatives as an option :)
