Description

A home made and versatile middle eastern condiment!

材料

1/4 cup
garlic (minced)
4 cloves
 
tahini paste
1/2 cup
ground cumin
1/4 teeaspoon
fine sea alt
1/2 teaspoon
 
cold water
6 tablespoons
 
fresh Italian parsley (roughly minced)
1 tablespoon (for garnish)

作り方

    Set a fine mesh strainer over a medium bowl. Set aside.

    Combine lemon juice and garlic in a small bowl.

    For 15 mins, leave it to let the garlic's flavor infuse.

    Pour the mixture through the strainer.

    Press out the garlic with a spatula to extract any liquid.

    NOTE: Discard the garlic.

    Add tahini, cumin and salt, then whisk to combine.

    Add 2 tbs water at a time, and whisk until it's smooth.

    Check the sauce's consistency by dripping it from the whisk

    Taste, and add salt/lemon juice as needed. Serve.

    NOTE: These are the brands of tahini I use for my recipes.

Store in air-tight container and refrigerate for up to 1 1/2 weeks.
