Description

Pan fried salmon in Niigata style

材料

salt
a pinch
salmon
1 piece
corn starch
as required
mirin
30ml
as required
sake
60ml
oil
as required

作り方

    Remove the scales (optional)

    Lightly salt the salmon top and bottom

  3. 3

    Coat the skin of the salmon with a thin layer of corn starch

  4. 4

    Preheat the pan with cooking oil

  5. 5

    Place the salmon with the skin facing the bottom

  6. 6

    Fry the skin until it becomes crispy

  7. 7

    Flip over the salmon and pour some sake to the side

  8. 8

    Put on a lid, allow the it to be steamed for a min or so

  9. 9

    Remove the salmon from the pan.

    Pour sake, mirin, soy sauce into the pan

  11. 11

    Lightly heat the mixture till the alcohol’s been evaporated

  12. 12

    Our the sauce onto the side of the plate as dressing
