My bottom round roast is 3.7lb.

Combine salt, pepper, garlic and rosemary in a small bowl.

Pat the meat with a paper towel.

Drizzle oil over the meat, rub/coat well all over the meat.

Sprinkle the seasoning mix all over the meat.

Wrap in plastic, refrigerate overnight for at least 3hours.

The next day, remove the meat from the fridge.

Leave the meat in room temperature for 30mins to 1 hour.

Position a rack in the second to lowest section of the oven.

Heat oven to 325 F.

Set on a rack in a baking pan.

NOTE: I set a parchment paper for an easy cleanup of the pan

Transfer the meat to the rack and roast for 75-105 minutes.

NOTE: roast until internal temperature reaches 130-135F.

Remove from oven and allow to rest for at least 30 minutes.
