Leave the sour cream/eggs out 1 hour prior to baking.

Grease a pan or line parchment paper.

Center a rack in the oven and preheat to 350F.

In a medium bowl, combine all dry ingredients and whisk well

In a large bowl, mash bananas into a paste with a fork.

Whisk in both sugar and whip it until fluffy.

Whisk in melted butter and mix until combined.

Add the eggs one at a time and whisk to combine.

Whisk in sour cream and vanilla until combine.

Add the dry ingredients into the wet ingredients.

Switch to a rubber spatula and stir gently.

NOTE: Scrape off the batter from the spatula halfway through

Stir until just about incorporated. Do not over mix.

Pour batter into the pan and smooth the top.

Give the pan a rap on the counter to get air bubbles out.

Bake for 70-75 mins or until golden brown.

NOTE:Test if a toothpick inserted in the center comes clean.

NOTE: If top of the bread is browned but the center is wet,

→ loosely cover with foil and bake until fully baked.

Remove from the oven and put the pan on a wire rack.

Allow the bread to cool for 30mins or so in the pan.

Turn out the bread onto a wire rack to cool completely.
