Description

If you have some over-ripe bananas, let's make banana bread!

材料 (9" x 4" loaf pan)

all-purpose flour
240 g
1 teaspoon
fine sea salt
1/2 teaspoon
ground cinnamon
1/2 teaspoon
 
overripe banana (mashed)
3-4 (=about 1 1/2 cup after mashed)
cane sugar
100 g
light brown sugar
100 g
unsalted butter (melted and cooled)
150 g
sour cream (at room temperature)
1/3 cup
pure vanilla extract
1 teaspoon

    Leave the sour cream/eggs out 1 hour prior to baking.

    Grease a pan or line parchment paper.

    Center a rack in the oven and preheat to 350F.

    In a medium bowl, combine all dry ingredients and whisk well

    In a large bowl, mash bananas into a paste with a fork.

    Whisk in both sugar and whip it until fluffy.

    Whisk in melted butter and mix until combined.

    Add the eggs one at a time and whisk to combine.

    Whisk in sour cream and vanilla until combine.

    Add the dry ingredients into the wet ingredients.

    Switch to a rubber spatula and stir gently.

    NOTE: Scrape off the batter from the spatula halfway through

    Stir until just about incorporated. Do not over mix.

    Pour batter into the pan and smooth the top.

    Give the pan a rap on the counter to get air bubbles out.

    Bake for 70-75 mins or until golden brown.

    NOTE:Test if a toothpick inserted in the center comes clean.

    NOTE: If top of the bread is browned but the center is wet,

    → loosely cover with foil and bake until fully baked.

    Remove from the oven and put the pan on a wire rack.

    Allow the bread to cool for 30mins or so in the pan.

    Turn out the bread onto a wire rack to cool completely.

    NOTE: Adjust your baking time depending on the size of pan.

コツ・ポイント

If you're using 9x5" loaf pan, bake for 60-65 minutes and use the toothpick method to check it after around 60 minutes.
