We’re moving! We’re moving back to Kentucky from Florida. It’s been quite the ordeal. So, fast forward about 5 months and here I sit in a nearly empty house starving to death. My husband is In Kentucky dealing with the new house and I’m dealing with movers in Florida, etc…anywho, I’m starving and I have very few ingredients left here. But I had some white potatoes. Smaller ones with the thin skin and when I’m hungry, nothing sounds better to me than a potato. So I washed the whole bag of them and drug out my last skillet and put this together and it’s exactly what I wanted. My daughter made us each a nice salad to go with it. Necessity is the mother of invention!!😂🩷

Ingredients

1 hour
2-6 servings
  1. 3 lbs Red or white skinned potatoes, washed and pricked. I used about
  2. Salt and pepper
  3. 1 stick butter, melted
  4. Parmesan cheese, grated

Cooking Instructions

  1. 1

    Preheat oven to 350. Place washed and pricked potatoes in an iron skillet. Spray well with cooking spray and salt and pepper potatoes. Place in oven and bake until done.

    Pull the potatoes out and slit the top of each one. Set oven to broil. Using a potato masher press down on the spuds until they’re all cracked open. Pour the melted butter all over the top getting it in every nook and cranny. Sprinkle parm and panko over top.

    Place skillet back in oven and let the potatoes sizzle and brown until done, maybe 7-9 minutes. We put homemade ranch dressing on them for the occasion with a nice salad. You can’t mess this up 😂

I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
