Gather all the ingredients.

Oil in a large skillet over medium low heat.

Add celery, salt and cook for 10 minutes to make the sauce.

Add garlic and cook until fragrant.

Increase heat to medium, then add octopus and red pepper.

Cook until the octopus is heated through, then add wine.

Bring to a simmer, and cook liquid off for 10 minutes.

Add tomato, salt, pepper, fish sauce, oregano and capers.

Cook it down until sauce gets thick. (about 10 minutes)

Lower the heat until pasta is ready.

Bring to a boil in a large pot of water. Add pasta and cook.

Reduce pasta cooking time by 1min so we FINISH it in the PAN
