Szechuan Mapo Tofu
Description
The clear red sauce is the sign of a delish dish!
材料
soft tofu (cut into square cubes)
1 pack (14 oz)
ground beef or pork
200 g
garlic (finely minced)
3 cloves
scallions (finely chopped)
2
canola oil
3 tablespoons
chili bean sauce (辣豆板醤)
1 1/2 tablespoons
fermented black bean sauce (豆豉醬)
1/2 tablespoon
crushed red pepper
1/4 teaspoon
200 ml
chicken bouillon powder
1 teaspoon
Chinese light soy sauce
1 tablespoon
cane sugar
1 teaspoon
potato starch
1 1/2 tablespoons
3 tablespoons
ground Sichuan peppercorn
1/2 tablespoon
toasted sesame oil
1 tablespoon

Combine potato starch and water in a bowl, set aside.

Oil in a wok over medium heat, add garlic.

Cook until fragrant. Heat to medium high, then add meat.

Break up the meat and cook until browned.

Add chili beans/black beans/red pepper then mix well.

Add water, bouillon, soy sauce and sugar.

Bring it to a boil and simmer for 2-3 minutes.

Add tofu and simmer for another 5 minutes.

Stir in half the starch mix, cook for 30 secs. Add the rest.

Taste, add salt as needed.

Add scallions/peppercorn and cook until scallions are wilted

Drizzle sesame oil over it, then serve.

You can add tofu straight into a wok too. Drizzle with chili oil for an additional kick!
