Whisk the egg yolks/corn starch/3 tbs milk in a medium bowl.

Whisk together milk/cream/sugar/salt in a sauce pan.

Heat the mixture over medium heat until the sugar dissolves.

NOTE: Do NOT let it boil.

Pour the hot milk in a thin, slow stream into the egg yolks.

Note: WHISK continuously while adding milk.

Set a strainer over the saucepan.

Pour the mixture through a strainer back into the saucepan.

Continue to cook over medium heat, whisking constantly.

Cook until the mixture simmers and has thickened.

Remove from the heat, and whisk in the vanilla extract.

Transfer the cream to a heatproof bowl.

Immediately cover the surface with a plastic wrap.

Let the pudding cool in the fridge until completely chill.
